4 medium-sized russet potatoes

1 small onion, finely grated

2 tablespoons all-purpose flour

1 teaspoon salt

¼ teaspoon black pepper

¼ teaspoon garlic powder

¼ teaspoon smoked paprika

3 tablespoons vegetable oil

Fresh chives, chopped (for garnish)

Begin by peeling the russet potatoes and rinsing them under cold water to remove excess starch.

    Grate the potatoes using a box grater or a food processor. Transfer the grated potatoes into a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible.

      In a mixing bowl, combine the dried grated potatoes with the finely grated onion, flour, salt, black pepper, garlic powder, and smoked paprika. Mix thoroughly until well combined.

        Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

          Once the oil is hot, take a generous portion of the potato mixture and form it into a patty. Place it carefully in the skillet. Repeat this process with the remaining mixture, ensuring not to overcrowd the skillet.

            Cook the hash browns for about 4-5 minutes on one side until they are golden and crispy, then flip them over carefully using a spatula. Cook for an additional 4-5 minutes until the other side is also golden brown and crispy.

              Repeat the process, adding more oil to the skillet as necessary for the remaining hash browns.

                Once cooked, transfer the hash browns to a plate lined with paper towels to absorb any excess oil.

                  Garnish with fresh chives before serving.
