4 slices of sourdough bread

1 large onion, thinly sliced

2 tablespoons unsalted butter

1 teaspoon sugar

1 tablespoon balsamic vinegar

1 cup shredded Gruyère cheese

½ cup shredded mozzarella cheese

Salt and pepper to taste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

In a large skillet, melt the butter over medium heat. Add the sliced onions, sugar, and a pinch of salt. Cook the onions, stirring occasionally, for about 15-20 minutes until they are caramelized and golden brown.

    Stir in the balsamic vinegar and thyme, cooking for an additional 2-3 minutes until the vinegar evaporates. Remove the skillet from heat and set aside.

      Heat a separate non-stick skillet or griddle over medium heat.

        Butter one side of each slice of sourdough bread. Place two slices, buttered-side down, onto the skillet.

          On each slice, layer half of the Gruyère cheese followed by a generous scoop of the caramelized onions. Top with the mozzarella cheese and finish with the remaining Gruyère.

            Place the other two slices of bread on top, buttered-side up. Cook until the bread is golden brown and the cheese begins to melt, about 3-4 minutes.

              Carefully flip the sandwiches and cook on the other side for another 3-4 minutes until golden brown and the cheese is gooey.

                Remove from the skillet, slice diagonally, and serve hot.
