Zutaten
  

200g Ramen noodles

1 tablespoon sesame oil

1 medium carrot, julienned

1 bell pepper (red or yellow), sliced

2 cloves garlic, minced

1 small zucchini, sliced

100g snap peas

2 green onions, chopped (reserve some for garnish)

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 teaspoon ginger, grated

Salt and pepper to taste

1 tablespoon sesame seeds for garnish

Optional: Sriracha or chili flakes for heat

Begin by cooking the ramen noodles according to package instructions. Drain and rinse under cold water to stop the cooking process and set aside.

    In a large skillet or wok, heat the sesame oil over medium-high heat.

      Add the minced garlic and grated ginger to the pan, sautéing for about 30 seconds until fragrant.

        Incorporate the julienned carrot, sliced bell pepper, and zucchini into the skillet. Stir-fry for about 3-4 minutes until they begin to soften.

          Add the snap peas and cooked ramen noodles to the pan, tossing gently to combine with the vegetables.

            In a small bowl, mix together the soy sauce and hoisin sauce. Pour this over the noodles and veggies, stirring well to ensure everything is evenly coated.

              Season with salt and pepper to taste, and if desired, add Sriracha or chili flakes for an extra kick.

                Toss everything together for another 2-3 minutes, allowing the flavors to meld and the ingredients to heat through.

                  Remove from heat and sprinkle with sesame seeds and chopped green onions for garnish.
