Zutaten
  

200g Arborio rice

300g shrimp, peeled and deveined

200g mussels, cleaned

1 small squid, cleaned and sliced into rings

1 onion, finely chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

3 cups seafood stock (homemade or store-bought)

1 teaspoon smoked paprika

1/2 teaspoon saffron threads

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges for serving

In a large, deep skillet or paella pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

    Stir in the diced red bell pepper and cherry tomatoes, cooking for an additional 5 minutes until the vegetables soften.

      Add the smoked paprika and saffron threads to the skillet, stirring well to coat the vegetables.

        Add the Arborio rice to the pan, stirring to combine all ingredients and allowing the rice to toast slightly for about 2 minutes.

          Pour in the seafood stock, bring to a simmer, and season with salt and pepper. Reduce heat to low, cover, and let cook for about 15 minutes, stirring occasionally.

            After 15 minutes, add the shrimp and mussels on top of the rice, gently pressing them into the mixture. Then lay the squid rings over the top. Cover and cook for another 5-7 minutes until the seafood is cooked through and the mussels have opened.

              Once cooked, remove from heat and let the paella sit for about 5 minutes covered with a dish towel to allow the flavors to meld.

                Before serving, garnish with freshly chopped parsley and serve with lemon wedges on the side for squeezing over the top.
