4 large eggs

1 cup cooked black beans, drained and rinsed

1 small onion, chopped

1 clove garlic, minced

1-2 chipotle peppers in adobo sauce, chopped

1 cup shredded cheddar cheese

4 medium tortillas

1 small avocado, diced

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

2 tablespoons olive oil

Hot sauce (optional)

In a large mixing bowl, whisk together the eggs, a pinch of salt, and pepper. Set aside.

    Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add the minced garlic and cook for an additional minute until fragrant.

        Stir in the cooked black beans and chipotle peppers, allowing them to warm through for about 2-3 minutes.

          Pour the whisked eggs into the skillet, stirring gently to combine everything. Cook until the eggs are just set, about 5-6 minutes.

            Remove the skillet from heat and fold in the shredded cheddar cheese until melted and well incorporated.

              Warm the tortillas in a separate dry skillet for about 30 seconds on each side, just until flexible.

                To assemble, place a generous portion of the egg and bean mixture on each tortilla. Top with diced avocado and fresh cilantro.

                  Roll up the burrito tightly, tucking in the sides, and place seam-side down on a plate.

                    If desired, drizzle hot sauce over the top for an extra kick before serving.
