1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

1 pound sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust for spice level)

2 tablespoons sesame oil

1 avocado, sliced

1 sheet nori, toasted and cut into strips

Black sesame seeds for garnish

Scallions, chopped, for garnish

Rinse and Cook Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker. Cook according to the rice cooker instructions or bring to a boil in a saucepan, then reduce heat to low, cover, and simmer for about 20 minutes until the water is absorbed.
